The craft brew revolution is sweeping the nation, and at Monkey Town we think it’s high time the revolution came to Rhea County. Because if there’s one thing you don’t monkey around about, it’s good beer.

Monkey Town Brewing Company co-founder and head brewer Kirby Garrison spent the first 14 years of his life living in Chattanooga and Dayton. He has been in the restaurant business for over 10 years in the "Hamptons" in New York as a bartender and waiter catering to the rich and famous. A few years ago, he discovered his passion for craft beer and after immersing himself in the history and culture of the American beer community, he started brewing his own beer and found himself hooked on the endless possibilities of brewing. He loves Shelter Island, it is a very special place but he is excited to get back to his Tennessee roots.

Co-founder and financial advisor for MTBC is Kirby’s dad Alan Garrison, who has been in the hospitality, sales and management industry for 35 years. Alan is from Dayton and has many great friends and family members here and the surrounding area. For the past 10 years, Alan has managed one of the most successful restaurants in the Hamptons area and one of the oldest and most distinguished yacht clubs in the country. His passion has always been great wine and food but thanks to Kirby's help, he has added great beer as a passion. He will be bringing that experience and passion to Monkey Town Brewing.

Monkey Town Brewing Co. gets its name from the infamous Scopes Monkey Trial, held in our fair town back in 1925, which saw substitute high school teacher John Scopes on trial for the criminal act of teaching the theory of human evolution in a biology class.

At Monkey Town Brewing, we believe the real crime in Dayton is the lack of delicious, locally brewed beer. That may have something to do with the tiny detail that currently it is illegal to brew beer for sale in Dayton, but good news! The paperwork to legalize brewing for sale is on its way through, and soon we can all raise a pint of cold, local-brewed beer and toast to the monumental and historic event that gave Dayton its nickname and gave us our brewhouse name.

Our brew pub will be situated on prime real estate on the newly revitalized Market Street in Dayton, with plenty of free parking and not a traffic jam in sight!

Our beers will be brewed in small, lovingly crafted batches, which will give us the freedom to innovate and experiment with recipes and ingredients, and evolve the ultimate Monkey Town brews. If beer isn't your drink of choice with lunch or dinner, we will have delicious wine, cocktails, and non-alcoholic drinks for you to choose from.

​The Monkey Town Brewing Co. menu will feature a wide variety of fresh, house-made local food — everything from comfort classics like fresh hand-cut fries and potato chips, gourmet grilled cheese, sliders, burgers, custom-made hot dogs and bratwurst, soups and salads, all the way up to fine dining items that will be second to none in East Tennessee!

Long Live Main/Market Street
Monkey Town Brewing Co. is proud to partner with Mainstreet.org, a national organization dedicated to preserving and revitalizing historic downtowns and commercial districts in American cities, and do our part to support the continuing restoration of Dayton’s historic Main & Market Streets. As proud Dayton natives, we are excited and determined to do our part.

We’re so close to getting Monkey Town Brewing Company up and running, we can practically taste the hoppy goodness now! But before we can brew a batch or cook a meal, we need the equipment to make it happen, and that’s where your help comes in!

With this fundraise, we need to raise $20,000 to help us buy our small batch brewing system and culinary equipment. Any funds we raise beyond that will go towards a larger brewing system so we can brew larger batches at a time. It would also help cover construction and renovation costs of our space to help us create the Monkey Town Brewing environment and ambiance.
