We love beer. And with our passion for this wornderful beverage comes the ever-nagging fear of a world with no good beers! Can you imagine that? We shiver to contemplate the possibility. But it's just one of the many reasons we are setting out on this endeavour.
Traditionally, American beer is seen as a cheap, casual drink for events like barbeques, tailgating, and toga parties. Meanwhile, wine is thought of as an expensive, formal beverage, reserved for events like intimate dinners and special occasions.
At Hallertau Brewing Company, we believe that beer deserves to be respected as a thoughtfully-crafted delicacy, worthy of even the finest event. So... to that end, we are combining our love of beer and years of craft brewing expertise to introduce a new line of "gourmet" brews for the Dallas/Fort Worth area.
Like any quest, the journey starts with the first steps.
Our first goal is to open a pilot kitchen/tap room, where beer lovers in our community can enjoy all the tempting flavors of beer we offer and, at the same time, create the environment needed to establish a license for our line of quality, barrel-aged and session beers. No, we're not the first folks to want to do such a thing, but we think our beers can only make things better.
But what makes Hallertau beer different than other breweries in the area, you ask?
We've all been there. You're at a steak house -- the kind that are so common and loved here in Texas -- and the Sommelier suggests an expensive wine to pair with your meal. But you, or someone else at your table, just doesn't feel like drinking wine. What if that Sommelier could offer you a unique beer choice that would complement your food in a way that would be just as satisfying as wine? That's where Hallertau would shine.
Allow us to bullet point our brews:
Imperial Beers. Stronger than most beers, these brews are usually reserved for special occasions. We will offer year-round, imperial, barrel-aged beers such as our:
Wee Heavy -- Named in an old Scottish tradition that roughly indicated the alcoholic strength of an ale, Hallertau Wee Heavy pays tribute to the Scotch ale also known as a 90/- (ninety shilling). It's a medium gravity beer, deep amber in color and featuring a malty sweetness, balanced hop aroma, and a roasted smokiness that gives it a smooth, creamy texture
English Brown Stout (as yet unnamed) -- Deep black in color and featuring a mocha, dark bitter chocolate, and vanilla palate that will go perfectly with braised or roasted meat
Double India Black Ale (as yet unnamed) -- A well-balanced, full-bodied beer that expresses aromas of hop, pine, lemon, rosemary, chocolate, and mocha
Session Beers. Beers to be enjoyed slowly in one delicious sitting. They have hearty flavors and lower in alcohol than our imperial beers. These brews will be available continually and will include our:
Buck-Necked Abbey -- Light brown with tones of copper, sporting fruity, estery, dried fruit characteristics and hints of candied fruit, orange, caramel, and grain
RyePA -- Pleasant notes of piney, floral hops, milk chocolate, and caramel aromas. A nice drinkable IPA with the added bonus of rye for some lively spice character
Ginger Beer. We've also crafted a strong, delectable ginger beer we want to offer you to enjoy as a mixer in a Moscow Mule, a Dark and Stormy ... or even solo.
This isn't our first brewing cycle. Since deciding to create the company last year, we have worked to perfect our recipes, taste test our brews and win over a significant crowd of excited beer lovers.
After producing a number of test batches of our imperial line, we invited locals for private, blind tastings. The participants’ responses were overwhelmingly positive, which of course made us feel all warm and fuzzy. But more importantly, it made us feel confident that the products we had would be accepted by the public.
We believe Hallertau Brewing can be a strong addition to the already rich and impressive craft-beer market in Dallas/Fort Worth, and we want you to be a part of its beginnings!
Currently, we do not have a facility to operate on a larger scale. We need a space where we can build our vision by creating a functioning tap room and pilot kitchen. With your help, we can make that happen, AND obtain our license to sell our unique line of beers to you.
Once we pass these milestones, we can open our facility, enter brewfests, and work with local bars and pubs to get our beer on their taps. All crucial stops along the path to our ultimate goal of blossoming into a full-fledged brewery operating at large capacity. And if that happens we promise, those of you who help us here, will always be a part of it.
Don Tedlock, Owner. Don's love for home brewing began in 2003. Since then, Don hasn’t stopped brewing beer, creating a variety of brews using different methods and flavors. He has even modified his own system to mimic the tools and processes of commercial operations. He has has created draft and bottle packaging for these homemade brews and is involved in all aspects of product production, including vendor management, brewing, packaging and physical delivery.
Brian Howe, Co-Owner. Brian is an advertising copywriter with over 20 years of experience. He has expertise in marketing, promotions, radio broadcasting, and interactive social media content creation. Brian will serve as the marketing and advertising manager, communicating and promoting the details and virtues of our products and - most importantly - providing quality customer service. But more than anything, he shares with Don a sincere love for beer in all forms. Beer… and of course, bacon.
